Pisco Sour

Recipe for PISCO SOUR
Ingredients
2 oz pisco sour
1 oz lime juice
1/2 oz simple syrup
1/2 egg white
1 dash of Bitters
Directions
Shake Ingredients vigourously with ice or blend with 4-5 full ice cubes
Strain into a champagne flute and add the bitters as an aromatic garnish

Pisco is a clear spirit distilled from high sugar grapes grown in Chile and Peru. It varies in strength from 33% alcohol to 50% with the prices varying accordingly. The finest piscos come from limited-production pisquerias such as Horcon Quemado. Traditionally served as a pisco sour, it is also popular with Coca Cola as a piscola.

My best Pisco sour, which was also my worst, came from a place in Peru, the real birthplace of Pisco (but don’t let the Chileans hear you say it.) When I used to guide in Machu Picchu I spent a lot of time in the city of Cusco. In Cusco there was a favorite Irish Pub for the tourists called Cross Keys Pub. There, mixed up by a man with a thick Irish accent, I had my best Pisco Sour. Maybe it was just the best because they served it in a pint glass…by the time I got to the bottom it was like, “That there is the best god dman pisco sour i ever had…” commence stumbling.
